Red Cabbage Salad

Can be made a day ahead.


  • 1 med. red cabbage, sliced thinly
  • 2 garlic cloves
  • 1 lemon (juice and zest)
  • 1/3 cup finely chopped parsley
  • 3T. olive oil
  • 1 tsp. cumin
  • pepper
  • salt


Slice the cabbage, salt and let sit for 10-20 minutes. Meanwhile, zest and juice the lemons into a large mixing bowl, press the garlic, chop parsley, add all the seasoning. Mix in the cabbage. Adjust the seasoning.
