INGREDIENTS
- 1 bunch parsley, chopped
- 1 bunch coriander, chopped
- 1 bunch mint, chopped
- 1 rucola, chopped
- 4 med. tomatoes, sliced
- 1 med. lemon juice, cut into sm. pieces
- 4T. olive oil
- salt
- pepper
METHOD
Wash, dry and chop the greens. Cut the lemon into pieces (with the skin). Make sure to remove the seeds. Add the tomatoes. Dress the salad with oil, salt and pepper. Needs to be made a little ahead for the flavors to merge.
