Cherry Tomato, Mozzarella and Nut Salad

  • 500 gr. cherry tomatoes, cut in halves
  • 200 gr. pearl mozzarella
  • 50 gr. pine nuts, toasted
  • 1 clove garlic, chopped
  • 1 sm. red onion, cut into thin rounds
  • 2T. basil, chopped
  • 3T. olive oil
  • 4T. balsamic vinegar
  • 1 tsp. sugar
  • salt
  • black pepper


Wash and cut the cherry tomatoes in half. Toast and chill the pine nuts. Slice the onion and put it in a small bowl with the vinegar and the olive oil. Chop the garlic and mix it in with tomatoes. Add chopped basil and the pine nuts. Dress with the onion mixture before serving.
